Chocolate Dipped Shortbread


1 1/2 cups butter, softened
3/4 cup sugar
1 tsp. vanilla
3 cups flour
1 tsp salt
1 pkg semi sweet chocolate chips
1 Tbsp shortening
finely chopped nuts, optional (I use almonds)

In a large bowl combine butter, sugar and vanilla; beat till creamy. Blend in flour and salt. Shape dough into 1" balls. Place on ungreased cookie sheets and flatten with the bottom of a glass dipped in sugar. Bake 8-10 minutes at 350. Remove from cookie sheet and cool. Melt chocolate chips and shortening in the microwave for one minute at a time on about 30-40% power level until melted. Dip each cookie halfway into melted chocolate. Place on cookie sheets lined with wax paper. Sprinkle with chopped nuts if desired. Chill in refrigerator. Keep refrigerated.
